CUBEB PEPPER

 
 
This rare Indonesian pepper, sometimes also referred to as Java Pepper or Tailed Pepper (because of the stalk left on the berry), has a peppery flavour with a touch of allspice & nutmeg with a slight bitter aftertaste. In the Middle Ages, Cubeb pepper was commonly used as a spice and as a pepper substitute. Crush the berries first before adding to any type of dish. This pepper gooes particularly well in Moroccan & North African foods, or give it a try for something a little different in any dish where you would ordinarily use regular black pepper.
